Our Producers have Talent !

You know it – and I have repeated it often enough – but producers are the basis of all cuisine, they are the privileged partners of all gastronomy. And it is important, especially in this time when everything is going so fast, to highlight those who take the time to do well. This is why I present to you today two producers with whom we have the pleasure of working at Mas de Boudan.
I would start with Christian Colautti from the Ferme de Cissou in Ners. We met at MIAM and he approached me to ask me to taste his Sweet Pepper from the Cévennes. A very beautiful product from our Cevennes Lands, the occasion was too good. So I've been using it ever since, replacing Espelette pepper, of which it's a cousin: a little less strong but warmer in the mouth. Our collaboration does not stop at this product since he offered me in December, for example, old-fashioned cardoons grown directly in the ground. Its land on the banks of the Gardon is ideal for this culture: they are tender at heart, it is a real delight and in addition they are organic. This is what I appreciate in our collaboration, the rigor and the care he brings to each of his products and with regularity, important details for a Chef.
This time we leave Earth and go to sea with Mathieu Chapel aboard his little Métier du Grau du Roi. He was introduced to me by an acquaintance – whom I thank and who will recognize himself – and since then we have been working together. He calls me after his catch of the day, it allows me to have the scoop and to be delivered during the day. Not only is the product exceptionally fresh, but Mathieu knows his trade and the fish are intact and of high quality: an invaluable treasure for the Chef that I am.
